Joey says this recipe is a crowd pleaser, even with her teens! It's a fast, meal in one that you can tailor to your particular veggie preferences.
Cheesy Ranch Ground Beef and Rice Casserole
Ingredients
1.5 pounds ground beef
1 (1 oz) Ranch seasoning packet
2 cups cooked long grain rice
1 cup fresh or frozen peas (mixed veggies work as well)
1.5 cups chicken broth
1 cup Velveeta cubed
Instructions
Brown hamburger. Turn heat to medium and add ranch seasoning. Stir in rice, peas and broth, add cheese. Let simmer for 5 minutes or until cheese is fully melted.
