'Tis the season for all kinds of ripe fruits in the north country! And while most of us are harvesting apples or pears, we might also be purchasing a box of peaches from a local fundraiser. If you are looking for something fun, simple and delicious to do with those peaches, look no further. Grilled Peach and Burrata Crostini
Ingredients
4 ripe peaches
1 baguette or Italian bread
8 oz. burrata cheese
2 tablespoons olive oil
Salt and pepper, to taste
Fresh basil leaves, for garnish
Balsamic glaze (optional, for drizzling)
Instructions
Preheat the grill, to medium heat
Wash and slice the peaches in half, removing the pit. Lightly brush the cut sides of the peaches with olive oil.
Place the peaches, cut side down on the grill. Cook for about 3-4 minutes, or until grill marks appear and the peaches are slightly softened.
While the peaches are grilling, slice the baguette into 1/2-inch thick slices.
Brush the bread slices with olive oil and grill them for 2-3 minutes per side, or until golden and crispy.
Remove the peaches from the grill and cut them into slices. Spread a generous amount of burrata cheese on each piece of grilled bread.
Place the grilled peach slices on top of the burrata. Sprinkle with salt and pepper to taste and finish with fresh basil leaves and a drizzle of balsamic glaze.
