As the crisp autumn air settles in, pumpkins take center stage. Not only as decorations, or fun craft nights, but as the star ingredient in kitchens across the country. From hearty soups to desserts, pumpkin recipes offer a combination of flavor, nutrition, and seasonal bliss!
One standout is Pumpkin Butter, a rich spread made with: 13 ounces pumpkin puree, 2/3 cup sugar, ¼ cup maple syrup, ½ cup unsweetened apple juice, 1 Tbsp lemon juice, ½ tsp ground cinnamon and a pinch of salt.
Add all ingredients to a large saucepan over medium-high heat and stir to combine.
Once bubbling, reduce to low heat and simmer.
Cook uncovered for 15-20 minutes, stirring occasionally.
Taste and adjust seasonings as needed.
Once completely cooled, transfer to a large glass container and store in the fridge.
Whether you’re baking muffins, simmering soup, or blending a smoothie, pumpkin’s versatility makes it a staple for seasonal cooking. It’s super easy to incorporate this nutrient-rich ingredient into your meals.
