Ingredients

  • 20 large mushrooms, cleaned and stems removed
  • 1 cup fresh spinach, finely chopped
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup cream cheese, softened
  • 1/2 cup grated cheddar cheese
  • 2 cloves garlic, minced
  • 2 tablespoons breadcrumbs
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F

  2. In a pan over medium heat, sauté the chopped spinach with a pinch of salt until wilted. Set aside to cool.

  3. In a mixing bowl, combine the cream cheese, cheddar cheese, crumbled bacon, minced garlic, and sautéed spinach. Mix well until all ingredients are evenly incorporated.

  4. Lightly coat the mushroom caps with olive oil and place them on a baking sheet, cap side down.
