Fruit Pizza

Description

My mother-in-law shared this one with me. I called it Janet's Fruit Pizza! I like to include kiwi fruit in the fruit mix, along with grapes, strawberries, and blueberries, but that's the beauty of this: you can add the fruit you enjoy. 

Ingredients

1/2 cup powdered sugar

3/4 cup margarine or butter, softened

1 1/2 cups flour

1 8 oz. package cream cheese

1/2 cup sugar

1 tsp. vanilla

a variety of fruits, sliced

2 1/2 Tbsp. cornstarch

1 cup fruit juice

3/4 cup sugar

1 tsp. lemon juice

Instructions

Combine the first three ingredients to make the crust and pat into the bottom of a pizza pan. Bake at 300 degrees for 10-15 minutes. Cool.

Combine cream cheese, 1/2 cup sugar and vanilla. Spread on top of cooled crust. Arrange sliced fruit in an attractive pattern over the cream cheese mixture. Combine the cornstarch, fruit juice, 3/4 cup sugar and lemon juice and bring to a boil, cooking until slightly thickened. Cool and spread over the fruit layer.
