Beef kabobs


2 lbs boneless beef sirloin, cut in 1-inch pieces

4 Tbsp vegetable oil

2 Tbsp lemon juice

2 Tbsp water

4 tsp Dijon-style mustard

2 tsp honey

1 tsp dried oregano

1 tsp black pepper

1 medium red pepper

1 medium onion

1 can large olives

1 container mushrooms, cut into halves if large


Cut beef into 1-inch pieces. Whisk together oil, lemon juice, water, mustard, honey, oregano and pepper in a large bowl. Pour half into another large bowl and add beef, mixing thoroughly to coat. In the other bowl, add all the vegetables and mix thoroughly to coat. Let marinate in refrigerator for an hour.

Alternately thread beef, and vegetables onto 12-inch skewers. Pour any remaining vegetable mixture over threaded kabobs. Broil for 9 to 12 minutes for rare to medium beef, turning occasionally. May also be grilled, placed on medium coals, for 8 to 11 minutes.
